It's loaded with favorite fall vegetables, mustard-brushed chicken breasts and plenty of warm spices. Plus some fun toppings tossed right on the pan in the form of bacon, walnuts and dried cranberries. They actually bring the dish home. 👍

It's basically a canvas pan version of my one pot easy harvest chicken skillet, which is some other autumn favorite.
Both have tender juicy craven, sweet potatoes, Brussels sprouts, walnuts and dried cranberries, all well seasoned and topped with well-baked salty bacon.
These are definitely some of my favorite flavor combinations. Especially when the weather cools downwards. 😍

I love how hands off this dinner is, also. Once everything is prepped, you lot pop it into the oven to get nice and roasted and well browned.

Notes on canvas pan harvest chicken and veggies:
- I use boneless, skinless chicken breasts but you could sub boneless craven thighs if you prefer. You may simply need to increase the cooking time until they achieve an internal temperature of 165.
- If you take really big craven breasts, you can do merely 2-3 and so slice them after they've cooked and rested, to stretch them out to 4 people.
- You can use a regular onion or a red onion for this recipe. Both are succulent.
- Y'all can substitute pecans for the walnuts if you'd like – or use your favorite nut.
- I try to use fresh thyme, but you can substitute stale thyme. Or try some other herb like rosemary.

Ingredients
- ii tablespoons actress-virgin olive oil, divided
- 4 (vi oz.) boneless, skinless craven breasts

- 2 tablespoons Dijon mustard
- three/4 teaspoon paprika
- one/2 cup walnuts, roughly chopped
- one/3 loving cup dried cranberries
Instructions
- Preheat oven to 400.
- Place the sweet potatoes, Brussels sprouts and sliced onions on one baking sheet.
- Combine the thyme, common salt, pepper, garlic pulverization and ground nutmeg in a pocket-sized bowl.
- Drizzle chicken breasts with two teaspoons olive oil and sprinkle with near half of the mixed spices on both sides. Place the seasoned craven breasts on a second sheet pan.
- Drizzle the vegetables with remaining 4 teaspoons olive oil and remaining spice mixture. Toss well to combine so spread out in an even layer.
- Combine the Dijon mustard and paprika in a modest basin then spread evenly on the tops of the craven breasts.
- Scatter the bacon pieces across the craven breasts and on the sheet pan with the veggies.
- Roast both sheet pans at 400 for 25 minutes.
- Stir the pan with the vegetables and add together walnuts to the pan. Return to the oven and go along cooking both pans for some other 10 minutes or until chicken is cooked through.
- Let the craven residual for 5 minutes before slicing and servings with the mixed vegetables. Sprinkle with the dried cranberries, season to sense of taste with salt and pepper, and enjoy!
